Chicken Salad Ingredients

  • 1 chicken breast
  • ½ a baked red pepper
  • 400g of potatoes
  • 250g of homemade mayonnaise
  • 50g of olives
  • 1/3 of a cup of sliced onion
  • Salt and pepper
  • 2 eggs (optional)
  • ¼ of an onion and 1 garlic clove

Prepare Cuban chicken salad

Start by softening the chicken breast in a pot with enough water that can cover it, add a tablespoon of salt, the ¼ of an onion and the garlic clove. Set aside.

In the meantime, peel and cut the potatoes into cubes, make sure they’re not too small. Add them to the pot with water and salt.

Cook the potatoes for 8 or 10 minutes. After it starts boiling, reduce the heat to medium low and cook until the potatoes soften without losing their form. Drain them and set them aside while they cool down.

In another pot, boil the eggs for 10 minutes on medium high heat after the water starts boiling.

Add a tablespoon of vinegar to the water so it’s easier to peel them once they’re cooked.

After the 10 minutes have passed, remove the eggs from the water and place them in a bowl with cold water. Peel them and set them aside.

Shred the chicken breast, cut the olives in small pieces, and mix everything with the rest of the ingredients.

Put the chicken salad in the fridge until the moment you’ll have it and decorate it as you wish.

Tricks to make the best chicken salad with homemade mayonnaise

The main trick to making a good chicken salad with potatoes is to use the best varieties, that in this case will be those that keep firm once they’re totally cooked.

In Cuba it’s hard to choose, but outside the Island we can find an endless number of options. The best kinds of potatoes to boil in this way are Agria potatoes, Monalisa potatoes, and Spunta potatoes.

Each one of these varieties has properties that make it perfect for a specific purpose, but in general they’re a great option to be used in this chicken salad recipe.

Regarding the chicken breast, we have two options for enjoying it, one of them is the one we already explained in this recipe using onion, salt and garlic to give it more flavor; on the other hand, we have an alternative that uses baked chicken breast.

What other variants of chicken breast can I prepare?

There are other variants to making chicken salad, it all depends on the combination of flavors you like.

There are those where you can add grated carrots, gherkin in vinegar or peas. If you like their flavors, feel free to add them because the salad will be delicious.

On the other hand, you can also make a version of chicken salad and pineapple, or apple and lettuce. It depends on the ingredients you have and what you like the most.
