Ingredients

  • 200 g of rice
  • 500 g of pork ribs, cut 2 fingers thick
  • 900 g of beef broth
  • ½ red bell pepper, cut
  • ½ onion, chopped
  • 4 cloves of garlic, crushed
  • 1 tablespoon of paprika
  • 1 grated tomato
  • 5 tablespoons of oil
  • Salt and pepper
  • Water

How to Prepare

1

First, season the ribs with salt and pepper. Then add oil and a pinch of salt to a pot. When the oil is hot, fry the ribs well.

2

Once browned, arrange them around the edge of the pot, and in the center, add onion, bell pepper, and garlic.

3

Cook for about 5 minutes and then add the grated tomato along with the paprika. Cook for 1 minute and cover with water.

4

Let it boil and cook for about 20 minutes over medium heat until all the water has evaporated. This allows the sauce to concentrate better and the ribs to soften.

5

When there is no liquid left, only a thick sauce, add the broth, wait for it to boil, and then pour in the rice.

6

Spread the rice evenly with gentle movements, check the seasoning, and cook for 7 minutes on high heat and then 9 minutes on medium-low heat.

Tips for Perfect Rice

Pork rib rice is a super delicious homemade recipe, but what I like the most is that it is a very complete dish, where we have protein and carbohydrates. You only need to add a salad, and that’s about it.

But to achieve a perfect result, I will give you some small, very useful tips. I am sure that with them, you will succeed every time you prepare it. Pay attention to these 3 aspects:

  1. Choice of Ribs: If you’re outside of Cuba, I recommend buying Iberian pork ribs for a more intense and juicy flavor. Otherwise, use ribs that aren’t too fatty.
  2. Type of Rice: Round grain rice is most recommended for this recipe since it absorbs all the flavors. However, it is perfectly adaptable to any other variety, such as long grain, parboiled, or basmati rice, as we Cubans like.
  3. Variations of the Dish: If you wish, you can add beer or white wine, replacing part of the broth. This option is ideal if there are no children among the diners or if you prefer a more intense flavor in your rice.
