For the Chicken and Marinade:
- 1 whole chicken cleaned and butterflied
- 200 g 1 cup plain yogurt (optional: sour cream or milk with lemon)
- Juice of 1 lemon
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon oregano
- Salt and pepper to taste
For the Vegetable Base:
- 4 medium potatoes sliced
- 2 onions sliced
- 2 carrots chopped
- 1 red bell pepper sliced
- 4 garlic cloves
- Olive oil
- Salt to taste
Make the Marinade:
In a bowl, mix the yogurt, lemon juice, paprika, garlic and onion powder, oregano, salt, and pepper.
Coat the chicken with the marinade, ensuring every part is covered. Let it rest in the refrigerator for 30 minutes to 2 hours to enhance the flavors.
Prepare the Vegetable Base:
In a baking tray, layer the sliced potatoes, onions, carrots, garlic, and bell pepper.
Drizzle with olive oil and season with salt. Mix well.
Bake the Chicken:
Place the chicken on top of the vegetable base.
Bake at 180°C (350°F) for 1 hour and 30 minutes. For a more golden finish, use the grill setting during the last 10 minutes.
